1. TRADITIONAL POT ROAST
- Preheat your oven to 160°C.

2. SOUS VIDE COOKING
- Season the grass-fed silverside roast with salt, pepper, and any desired herbs or spices, as mentioned earlier.
- Place the seasoned roast in a vacuum-sealed bag or a heavy-duty resealable plastic bag, removing as much air as possible.
- Preheat a sous vide water bath to your desired level of doneness. For medium-rare, set the temperature to around 57°C.
- Submerge the bag with the roast into the water bath and cook it for 12 to 24 hours. The extended cooking time at a lower temperature helps achieve a tender and evenly cooked roast.
- Once the sous vide cooking is complete, remove the roast from the bag and pat it dry with paper towels.
- Sear the roast on a hot pan or grill for a few minutes to add some color and flavor to the surface.
- Slice the silverside roast and serve it with your favorite sides and sauces.
